Blackberry & Brie Grilled Sandwich on Sourdough
Prep: 10 min | Cook: 10 min | Serves: 4
Ingredients
1 cup fresh blackberries
1 tbsp fresh lemon juice
1/4 cup blackberry preserves or jam
Zest of 1 lemon fresh lemon zest
1 tbsp finely chopped fresh mint
8 slices sourdough bread
4 tbsp unsalted butter, softened
10 oz brie cheese, sliced
1/4 tsp crushed red pepper flakes
2 oz arugula
Instructions
1. Cook the blackberries: Simmer blackberries and lemon juice over low heat for 2–3 minutes until softened but still whole.
2. Finish the filling: Remove from heat and stir in blackberry jam, lemon zest, and mint. Let cool slightly.
3. Prep the bread: Butter one side of each sourdough slice. Heat a cast iron skillet over medium.
4. Build the base: Place slices butter-side down in the skillet. Spread blackberry filling on the dry side.
5. Add the layers: Top with sliced brie, red pepper flakes, and arugula. Close with a second slice, butter-side up.
6. Grill the sandwich: Cook 3–4 minutes per side over medium-low heat until golden and the brie is melted.
7. Serve: Slice in half and serve warm.
